When including some IG in an Apocalypse game list do you have to follow the platoon structure? Could you take a heavy weapons team without taking an officer and two additional squads?

I, on the other hand, would say "whatever" since I'd just vapourise them with a 10" template turn 1 regardless. A couple of squads won't make much difference either way and if someone really cares they're missing the point of Apoc.
Just ask you opponent / organiser.
