I'm not sure I understand what you're saying. So we re-roll every turn until it switches from the original setting to the opposite like if it was night on turn one then we re-roll until it becomes dawn?

This is one of those questions where simply looking in the rulebook would answer your question very thoroughly.
p124 under Night Fighting
At the start of turn 1 roll a d6. on a 4+ it is night fighting for game turn 1.
If you roll a 1-3 then no Night Fighting...Though if there was no NF on turn 1 then on turn 5, 6, and 7 you roll a d6. on a 4+ Night Fighting is in effect for the rest of the game. So if you roll a '4' on turn 5, then it's all dark for the remaining turns.
I think it is another of GWs cinematic rules. This one is suppose to simulate a dusk or dawn attack. Roll the dice and if turn one, then you attacked just before the sun rose, and surprised the enemy after your troops used the dark to move into position.
If you have to roll on turns 5, 6 or 7, then you tried to attack just before dusk and have tried to get the light so the enemy is blinded, and you can confuse the hell out of them as you roll over their defenses in the waning light.
If you fail to get night fighting, then you timed it very badly, and attacked in broad daylight.

I suppose you could alway do continuious rolling as house rules, though you might have to limit it to one activation/deactivation, unless the planet spins really quite fast. In which case day/night would probably be the least of the issues...
