    Default Do monsterous mounts have armor saves?

    Simple question: If a character is on mount with more than two wounds, does the mount have any type of armor save if it is not listed in the army book?

    No.

    Only if the monsterous creature has a listed armour save on its profile: IE Dragon 3+ scaly skin
    Empire Pegas/griffon: no save listed.
    Simply being an Monsterous creature does not grant an armour save.

    So the easiest way of getting a monstrous mount out of the game is by shooting it? Even with randomization, enough arrows should get in to make the character walk.

    Yes indeed. Its also a good way to knock the rider off, remember he doesn't get +1 to his armour for being on a monsterous mount.
