At the risk of getting back on track, the Ebon Hawk has so many fond memories for me so that's my choice. The Normandy comes a close second for similar reasons.

Imperial Super Star Destroyer, hands down.
So imposing, yet sleek lines. I mean, it's picket ships are capital class. It has a vomit inducing amount of fighter, bomber and interceptor support. What's not to like? Christ, that reminds me of a horrific discussion I had once on a Star Trek forum. Which basically boiled down to 'Well, if the prerequisite for canon, to which you are holding an exceptionally rigid view, is that unless it is directly seen or stated on screen in one of the episodes or films, your existence is violating the canon since you have never been in one of the episodes.
